Cuba’s privately owned restaurants, or paladares, are almost always the best choice for dining, and particularly in Havana there seems to be new ones popping up for us to try almost weekly!  Eater recently published a fascinating article on dining in Havana and how the owners of paladares work with the black market to make magic happen – like this delicious red snapper lunch we enjoyed at Atelier in Havana earlier this month!
